Hi, I’m Caroline O’Connor, I’m a mum of four kids (3 men and a little lady!) and a registered dietitian based in Cork.
I am lucky to have worked as a registered dietitian in Cork for over 18 years since finishing qualifying as a dietitian. I’ve worked with people of all ages and enjoyed it all. Since becoming a parent however, what I’m most passionate about is getting babies and children off to the best possible start in life with food, feeding and nutrition. It’s a sad fact, but having worked with thousands of people over the years as a dietitian in Cork, I’ve seen first-hand how challenging it can be to change the bad habits of a lifetime. I strongly believe that every child deserves the chance to grow into a healthy adult and have a positive relationship with food. This is where I know I can help parents as it’s well known that what and how a child eats when they are young will affect their health not just today but also for years to come.
My eureka moment for Solid Start and our Baby Weaning Classes came while I was on maternity leave with my fourth baby, my little girl Alice. Getting ready to start weaning Alice, I was struck at how things had changed in the area of baby weaning in the eight years since I’d had my first baby. In addition to the advice from ‘well meaning’ relatives, neighbours and friends there was an explosion of Facebook groups, bloggers with their own baby weaning and nutrition advice and of course a multi-million euro baby food industry. It’s no wonder people were in a spin when faced with an overload of conflicting and confusing information about starting the weaning journey.
Here’s where I saw a real opportunity to use my expertise to help other parents and so Solid Start and our Baby Weaning Classes began in the summer of 2016 and it has been growing steadily ever since.
In 2018, due to demand from parents for a follow on to our Baby Weaning Class I created our ‘Fussy Eating Class’ looking at the challenges and solutions to feeding toddlers and young children. Also since early 2018, parents in Cork can also consult with me, a registered dietitian on a range of feeding issues relating to their babies and children.

Qualifications and Affiliations
I have a BSc (Hons) in Human Nutrition and Dietetics from Trinity College/DIT. I am a member of the Irish Nutrition and Dietetic Institute (www.indi.ie) and am registered with CORU- the Irish body responsible for regulating health and social care professionals (www.coru.ie).
